Makes 24 muffins
- 1 packaged yellow cake mix
- 1 1/3 C water
- 2 large eggs
- 1 fresh, very ripe pear (peeled, cored, and chopped)
- 2 cups quick oats
- 1 C raisins
- ½ C chopped nuts (walnuts or pecans)
- 1 ½ tsp. ground cinnamon
Preheat oven to 350 degrees.
Line a muffin pan with 24 paper muffin cups.
In a large bowl, mix together cake mix, water, chopped pear, eggs, and oats until well blended. Stir in raisins, nuts, and cinnamon.
Fill each muffin cup ¾ full of batter.
Bake 20-25 minutes and serve warm from the oven.
